  • 0.10 Kg faina
  • 0,85 Kg supa de pasare
  • 0,10 Kg frisca
  • 0,03 Kg gelatina
  • 0,015 Kg sare

Metoda de preparare

Faina se cerne. Gelatina se inmoaie in apa rece, se adauga 100g supa de pasare, se topeste pe foc foarte mic.

Untul se topeste, se amesteca cu faina dizolvata in 100g supa de pasare, fara sa se formeze aglomerari. Se adauga supa de oase(650g), frisca si sare si se fierb circa 20 minute la foc moderat. Se adauga gelatina si se amesteca pana la omogenizarea acesteia. Sosul se strecoara prin etamina. Se foloseste la innaparea unor preparate reci din pasare, subproduse din carne de vita, precum si peste.
